♦Charles Rhanofer (1836-1899)-first internationally renowed of an American restaurant, Delmonico's in New York City.

♦Rhanofer (1893)- published "Franco-American" encyclopedia of cooking.
♦Marie-Antoin (Antoni) Careme-known as "The King of cooks & the cook of Kings".

♦Auguste Escofer- he is called the "Emperor of the World's Kitchen.


> Restaurant- is derived from the French word restaurer ("to restore")
>rotisseurs-who cooked la grosse viande or the main cuts.
>patissiers- who cooked poultry, pies, & tarts
>tamisiers- who bake breads.
>vinaigriers-who made sauces & some stews, including some restoratives
>traiteurs- who made ragouts
>porte-chapes- caterers who organized feasts & celebrations.
